IWS Prep is designed to address the needs of the inquisitive wine enthusiast and aspiring wine professional alike. As a foundation course, IWS Prep remains accessible but is content-rich and full of cultural highlights that are as engaging as they are entertaining.

The course provides an introduction to Italy, explores its key wine regions and delivers core information on 39 of the country's need-to-know wines.

IWS Prep is your passport to understanding Italian wine. It also acts as a stepping-stone to the internationally acclaimed Italian Wine Scholar certification program. 

The coursebook and instructors alike will guide you on a wine-focused journey through Italy, learning about legendary wines, foods, landmarks and cultural attractions as you “travel.” The program has been divided into three sections, each featuring a geographical area of Italy: the wines of Northern Italy, the wines of Central Italy and the wines of Southern Italy. Within each section, a tantalizing palette of wines are showcased.

IWS Prep consists of four 2-3 hour classes covering the following areas:

Day 1: Introduction & Italian Sparkling Wines
3 hours of instruction; meets 18h-21h
- 1 hour general introduction and basic wine theory
- 1 hour sparkling theory
- 1 hour tasting

Day 2: Northern Italy
2.5 hours of instruction; meets 18.30h-21h
- 1.5 hour theory
- 1 hour tasting

Day 3: Central Italy
2.5 hours of instruction; meets 18.30h-21h
- 1.5 hour theory
- 1 hour tasting

Day 4: Southern Italy & IWS Prep Exam
3 hours of instruction; meets 18h-21h
- 1 hour theory
- 1 hour tasting
- 1 hour exam review & exam

  • In-depth knowledge on:

    • Location and climate and their effects on viticulture and wine style

    • Topography, geography and soils and their impact on the vine

    • Grape varieties and their organoleptic profiles

    • Viticulture and winemaking practices

    • 39 DOs with their regulations and wine styles


Students will taste over 15+ Italian wines to bring learning objectives to life and practice tasting techniques. All wines are carefully curated by Sommelier Antonio Giustacchini to represent a broad sampling of the classic wines of Italy.


  • 11 hours of classroom instruction

  • Extensive tasting experience which includes Tastings of 20+ Wines of Italy carefully curated by Italian Sommelier Antonio Giustacchini

  • A beautifully designed 125-page, landscape-format coursebook filled with photographs & maps: The Wines of Italy: Glass by Glass.

  • Access to high-quality e-learning activities designed to enrich the coursebook and support different learning styles; these activities include interactive e-learning modules with additional cultural highlights and quizzes.

  • An optional exam. The exam (included in the course price) is composed of 50 multiple choice questions and must be completed in 45 minutes, passing score is 60%. The exam is optional. The IWS Prep Certificate will be issued to those individuals who achieve a score of 60 or higher.

Salut and Vertical Wine have formed an important partnership working together to promote Italian wines in Spain. Working with Vertical Wine, Salut is able to offer its students an intimate knowledge of Italian wine, wine regions, and culture, as well a large catalogue of wines for purchase from all over Italy.

Italian native Antonio Giustacchini is a Sommelier and a co-founder of Vertical Wine, an Italian importation and distribution company based in Barcelona. Antonio holds a Diploma de Sommelier UAES (Unión de Asociaciones Españolas de Sumilleres) from ESHOB Barcelona, endorsed by Abat Oliba CEU University. In addition, Antonio offers consultancy for the food & beverage sector, including pairings, wine lists and staff training. He is highly experienced in running didactic and sensorial tastings, helping his clients to discover the Italian landscape of which he is a great connoisseur.

Melissa Leighty holds a certificate in Italian Wines from Wine Scholar Guild, a WSET level 3 in Wine & Spirits certificate, and a WSET Level 1certificate in Sake.

Antonio and Melissa co-teach the Wine Scholar Guild courses at Salut.


The Italian Trade Commission (ITA) endorsed the program in recognition of its exceptional level of depth, accuracy, detail, and academic rigor.
